Vaja läks:
2,5 dl nisujahu
1,5 tl küpsetuspulbrit
1 tl vanillsuhkrut
2 dl kõrvitsapüreed
2 spl sulatatud võid
2 dl maitsestamata jogurtit (hapukoort)
2 spl suhkrut
2 spl suhkrut
1 tl riivitud ingverist pressitud mahl
1 tl kaneeli
natuke riivitud muskaati
0,5 tl meresoola
1 muna, eraldatud
õli praadimiseks
Segasin omavahel sõelutud jahu, küpsetuspulbri ning vanillsuhkru. Eraldi suuremas kausis segasin kõrvitsapüree, sulatatud või, jogurti, suhkru, maitseained, ingverimahla ning munakollase. Segasin sinna juurde jahusegu. Munavalge vahustasin soolaga eraldi kausis aga mitte väga tugevaks vahuks, et pärast tainasse munavalgevahu tükid ei jääks. Segasin munavahu õrnalt tainasse ning küpsetasin supilusikasuurused pannkoogid vähese õliga kuumal pannil mõlemalt poolt pruuniks. Serveerisin pannkooke mee, murakamoosi ja mustsõstra toormoosiga.
Sunny Pumpkin Spice Pancakes
2,5 dl all-purpose flour
1,5 teaspoons baking powder
1 teaspoon vanilla sugar
2 dl pumpkin puree
2 tablespoons butter, melted
2 dl plain yogurt or sour cream
2 tablespoons sugar
1 teaspoon cinnamon
1 teaspoon ginger juice from freshly grated ginger
1,25 teaspoon nutmeg
0,5 teaspoon salt
1 egg, separated
1 teaspoon cinnamon
1 teaspoon ginger juice from freshly grated ginger

Stir together the sifted flour, baking powder, and vanilla sugar.
Whisk together the pumpkin, melted butter, sugar, yogurt, cinnamon, ginger, nutmeg and egg yolk in a separate bowl. Fold this mixture into the dry ingredients.
Beat egg white with salt on medium-high speed, until the whites form soft peaks. Do not overbeat! Fold egg white into batter, mix lightly but thoroughly with a spatula, make sure no egg white streaks remain.
Whisk together the pumpkin, melted butter, sugar, yogurt, cinnamon, ginger, nutmeg and egg yolk in a separate bowl. Fold this mixture into the dry ingredients.

Heat skillet with little oil or butter over medium heat. Pour tablespoon of batter for each pancake and cook approximately 3 minutes per side.
Serve with honey or jam.
